For us, specialty is not a category, but a mindset that takes the entire journey of coffee seriously.
The growing region, processing, roasting, and preparation are all parts of the same philosophy: that coffee should not lose any of its inherent qualities.
Our goal is not to replicate the same taste in every cup, but to precisely showcase what is unique to a given coffee. That's why we work with changing batches: because coffee is not constant, and we don't want to pretend it is.

We are currently working with an Ethiopian coffee whose light roast
and clean structure allow the character of the growing region to shine through. Its taste presents fruitiness and delicate florality, not highlighted but kept in proportion, thus remaining balanced throughout.
This coffee does not strive for intensity; rather, it offers a gradually unfolding flavor profile. It is not a permanent part of our offering but
a current selection that will be on the counter for a while, then
make way for the next batch.

The Hausbrandt Gourmet Columbus, on the other hand, is a stable point, built not on change, but on consistency.
In this 100% Arabica blend, the lightness of citrus notes
and the deeper tones of cocoa are balanced, ensuring that the coffee reliably delivers the same character in every brewing method.
This coffee does not seek to adapt to current trends; instead, it represents a consistent quality. This is precisely why it becomes a staple to which one can always return.

La Marzocco has been handcrafting espresso machines in Florence since 1927, and has now become one of the most recognized icons of specialty coffee culture. The brand combines traditional Italian craftsmanship with modern technology, and its machines are used by acclaimed cafes and baristas worldwide.

We use a La Marzocco machine because we believe that the foundation of quality coffee is not only good ingredients, but also reliable technology and the barista's skill working together.
